Once you make your own homemade taco seasoning, you will never look back. It’s easy to mix up and you can adapt the recipe until it’s perfect for your family. Keep it ready to go in the store cupboard or make spice jar gifts for a hostess present or stocking filler. This taco seasoning is so versatile, you can use it in all your favourite Mexican recipes, as a rub or add it to a homemade soup!

Ingredients

Yields – spice for one family meal

  • 1 – 2 tsp chili powder (depending on the strength of powder and how hot you like it!)
  • 1/2 tsp ground cumin
  • 1/4 tsp ground black pepper
  • 1/2 tsp salt
  • 1/4 tsp garlic powder
  • 1/2 tsp crushed red pepper
  • 1 tsp smoked paprika
  • 1/4 tsp onion powder
  • 1/4 tsp dried oregano

Simply mix together, taste and adapt as you like. Store in small glass jars to prevent stains on plastic containers.  This recipe is roughly the equivalent of a single store-bought packet of taco seasoning, but feel free to make a larger batch to scoop and use whenever you like or to increase or decrease depending how many you are cooking for. Make a large batch and use it for spice jar gifts too. Spice jars make perfect Christmas presents or hostess gifts and will be a big hit in a student care package!

 

Why homemade taco seasoning?

Better for you and your family

With homemade seasoning, you cut out all the additives, preservatives and coloring. You can keep salt / sodium to the level that you are happy with for your family too. If you don’t like too much spice, you can keep down the chilli quantity and make a milder taco seasoning. Prefer a more smoky seasoning? No problem – just swap the salt for smoked salt or increase the quantity of smoked paprika.

This taco bowl is a perfect, satisfying and well balanced weeknight dinner. Full of flavours, textures, and colours with a high veggie count for a healthy spin. Individual bowl portions are a fun change to a traditional plate or family sized platter and it also means the meal is highly customizable. Try minced turkey, chicken pieces or soy protein instead of beef. Add any kind of bean or even add canned or frozen corn.​This is a family favourite dish at any time of year – easy to make for 2 and perfect for a Taco bowl party where guests customize their own bowl!​

Ingredients

Yield – 2 taco bowls (plus 2 extra portions of meat/bean mix to freeze)

  • 250g lean minced beef
  • 1/3 cup of brown short grained rice
  • 1/2 Red pepper
  • Can of chopped tomatoes
  • 1/2 onion
  • Small pot of natural / greek yogurt
  • 1 Avocado
  • Can of kidney beans
  • 1/4 cup of grated cheese
  • One portion Taco Seasoning (see my recipe for homemade Taco seasoning)

Step by Step Instructions

Step 1

First add the diced onion, pepper and a little olive oil to a cast iron pan, or large frying pan. Soften gently for a few minutes. Add the ground / minced beef and brown in the pan. Once nicely browned add the beans and mix well.​ Add the chopped tomatoes . Add the taco seasoning and simmer​.​

Step 2

Cook the rice while the meat mix simmers. For 1/3 cup rice, add 2 x 1/3 cups of water to a saucepan. Follow the rice packet instructions for cooking time, but for my short grain rice I bring to the boil, cover and turn the heat low, simmering for 15-20 minutes. The rice should be soft and fluffy once cooked.

Step 3

Make a simple salsa by combining the chopped tomatoes, red pepper, chilli, coriander/cilantro, onion and juice of 1 lime. Season with salt and pepper and mix well.

  • 1/2 onion, finely diced
  • 2 tomatoes, chopped
  • Small bunch of coriander / cilantro, roughly chopped
  • Juice of 1 lime
  • 1 chilli, finely chopped
  • 1/2 red pepper, chopped
  • Salt and Pepper to taste

Construct the taco bowl

The idea is to make the taco bowl sectioned and interesting!​  Divide the rice into the bottom of two bowls.​ Divide the taco meat into four servings – adding 2 portions on one side of each bowl and reserving the other 2 portions to refridgerate or freeze.​  Add a few spoonfuls of salsa.​ Add 1/2 the grated cheese in a small pile on top of each bowl.​ Arrange 1/2 the avocado slices on the top of each bowl.​ Garnish with a few spoons of yogurt and a sprig of coriander.​

Change this recipe up to suit your family or dinner guests.​​  Spicy – add extra chilli pepper flakes while cooking to add heat into the dish or sprinkle the taco bowl with jalapeno slices.  Meat free – use ground tofu instead of beef.

A healthy and delicious breakfast that’s easy to prepare in advance and take on the road for your next camping trip. Prepare the dry ingredients before you leave on your trip and simply mix in the fresh ingredients the night before, chill and the next morning breakfast is ready to go!​

Ingredients

Yields – 2 portions

  • 2 small pots of natural or greek yogurt
  • 80g oats
  • 1 large carrot
  • 4 tablespoons of raisins
  • A handful of nuts
  • 2 tablespoons of flax seed
  • 2 tablespoons of maple syrup
  • A good grating of nutmeg
  • 1 teaspoon of cinammon
  • 1/2 cup of milk
  • Optional – fresh blueberries to top

One of the things I love most about camping is al fresco dining. Whether we are huddled around the fire, picnicing on the beach or BBQing at base camp, something about the outdoors makes everything taste better! This year we are loving our campervan. It’s bringing us new spontaneity to get away last minute for a night or two with minimal packing and preparation! Our little fridge is perfect for two, but as always with camping it’s best to make life easy when you are away and keep food preparation to a minimum so you can enjoy living in the moment.  ​I love a bacon roll when we are camping! But sometimes I want to have a breakfast that’s packed with goodness, easy to prepare and makes me feel fueled for whatever activities lie ahead in the day. 

Step by Step Instructions

Step 1

Before you leave preparation:

Mix all the dry ingredients together in a bowl and pour into a ziplock bag or other airtight container.

Night before breakfast preparation:

Grate the carrot into a bowl, add the yogurt and maple syrup and mix together well. Pour in the dry ingredients and stir it all up until it’s nicely combined.​ Divide into two bowls or dishes with lids and put in the fridge or cool box.​ 

Step 3

Morning preparation for your healthy breakfast:

Remove the lid, top with blueberries and enjoy!
