About this Recipe
A healthy and delicious breakfast that’s easy to prepare in advance and take on the road for your next camping trip. Prepare the dry ingredients before you leave on your trip and simply mix in the fresh ingredients the night before, chill and the next morning breakfast is ready to go!
Yields – 2 portions
- 2 small pots of natural or greek yogurt
- 80g oats
- 1 large carrot
- 4 tablespoons of raisins
- A handful of nuts
- 2 tablespoons of flax seed
- 2 tablespoons of maple syrup
- A good grating of nutmeg
- 1 teaspoon of cinammon
- 1/2 cup of milk
- Optional – fresh blueberries to top
One of the things I love most about camping is al fresco dining. Whether we are huddled around the fire, picnicing on the beach or BBQing at base camp, something about the outdoors makes everything taste better! This year we are loving our campervan. It’s bringing us new spontaneity to get away last minute for a night or two with minimal packing and preparation! Our little fridge is perfect for two, but as always with camping it’s best to make life easy when you are away and keep food preparation to a minimum so you can enjoy living in the moment. I love a bacon roll when we are camping! But sometimes I want to have a breakfast that’s packed with goodness, easy to prepare and makes me feel fueled for whatever activities lie ahead in the day.
Step by Step Instructions
Before you leave preparation:
Mix all the dry ingredients together in a bowl and pour into a ziplock bag or other airtight container.
Night before breakfast preparation:
Grate the carrot into a bowl, add the yogurt and maple syrup and mix together well. Pour in the dry ingredients and stir it all up until it’s nicely combined. Divide into two bowls or dishes with lids and put in the fridge or cool box.
Morning preparation for your healthy breakfast:
Remove the lid, top with blueberries and enjoy!
